Lemon Herb Roast Chicken
A whole chicken rubbed with garlic, thyme, and lemon, roasted until the skin turns deep golden and crackling.

- 2lemons, halved
- 1 headgarlic, halved crosswise
- 4 sprigsfresh thyme
- 3 tbspbutter, softened
- 2 tbspolive oil
- 1 tbspkosher salt
- 1 tspcracked black pepper
Steps
- 1Preheat the oven to 425°F. Pat the chicken dry and season the cavity with salt and pepper.
- 2Stuff the cavity with a lemon half, the garlic head, and thyme sprigs.
- 3Rub the skin with butter and olive oil, then season generously with salt and pepper.
- 4Roast for about 1 hour 20 minutes, until the juices run clear and the skin is deeply golden.
- 5Rest for 15 minutes before carving, then squeeze the remaining lemon over the top.
