Lemon Herb Roast Chicken

A whole chicken rubbed with garlic, thyme, and lemon, roasted until the skin turns deep golden and crackling.

Ingredients

  • 1whole chicken, about 4 lbs
  • 2lemons, halved
  • 1 headgarlic, halved crosswise
  • 4 sprigsfresh thyme
  • 3 tbspbutter, softened
  • 2 tbspolive oil
  • 1 tbspkosher salt
  • 1 tspcracked black pepper

Steps

  1. 1Preheat the oven to 425°F. Pat the chicken dry and season the cavity with salt and pepper.
  2. 2Stuff the cavity with a lemon half, the garlic head, and thyme sprigs.
  3. 3Rub the skin with butter and olive oil, then season generously with salt and pepper.
  4. 4Roast for about 1 hour 20 minutes, until the juices run clear and the skin is deeply golden.
  5. 5Rest for 15 minutes before carving, then squeeze the remaining lemon over the top.
