Smoky Black Bean Tacos

Charred corn, smoky black beans, and a bright cabbage slaw piled into warm tortillas. Quick, cheerful, and easy to share.

Ingredients

  • 2 cansblack beans, drained and rinsed
  • 1 cupcorn kernels, fresh or frozen
  • 1 tspsmoked paprika
  • 1 tspground cumin
  • 2 cupsshredded purple cabbage
  • 1lime, juiced
  • 8small corn tortillas
  • 1/2 cupcrumbled queso fresco
  • to tastesalt

Steps

  1. 1Char the corn in a dry skillet over high heat until lightly blackened, then set aside.
  2. 2In the same skillet, warm the black beans with smoked paprika, cumin, and a splash of water until heated through.
  3. 3Toss the cabbage with lime juice and a pinch of salt to make a quick slaw.
  4. 4Warm the tortillas, then fill each with beans, charred corn, and slaw.
  5. 5Top with queso fresco and serve with extra lime on the side.
